This helps blend the liver seamlessly into the ground meat, making the taste of liver nearly undetectable. If you don’t have one, just cut it into as little chunks as possible with your kitchen knife.

Ingredients:

For the Meatloaf Mixture:

  • 1 lb ground beef
  • 1 lb ground beef liver (minced, or blended)
  • 1 bunch of green onions, finely chopped
  • 2 large eggs, room temp
  • 3-5 cloves garlic, minced
  • 3 tbsp ketchup or tomato paste
  • 3/4 cup quinoa, cooked rice, or bread crumbs
  • 1/3 cup of milk
  • 1 1/2 tsp salt
  • 1/4 tsp ground black pepper

For the Sauce:

  • 1 cup ketchup
  • 1 tbsp apple cider vinegar
  • 2 tbsp coconut sugar (or brown sugar)
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

Step-by-Step Cooking Instructions

1. Prep the Liver

If using raw liver, cut it into chunks and pulse it in a food processor until smooth. Alternatively, run it through a meat grinder to create a fine texture. This ensures the liver blends well into the meat mixture without any noticeable chunks. But hey, we’ve definitely skipped this step in the past, and the chunks are not at all bad in my opinion.

2. Combine the Meatloaf Mixture

In a large bowl, mix the ground beef, ground liver, green onions, eggs, cooked rice or quinoa or breadcrumbs, garlic, milk, ketchup, salt, & black pepper. Stir until well combined using a large sturdy spoon.

Let this sit for a few hours in the fridge if you have the time for the flavors to really infuse, if not no worries, it will still turn out delicious.

3. Mix the Sauce

In a small bowl, combine the ketchup, apple cider vinegar, coconut sugar. garlic powder, onion powder, and salt and pepper. Mix it well and set aside.

4. Transfer to a Loaf Pan

Grease a glass pan or 9 by 5 loaf pan with coconut oil or olive oil, then transfer the meatloaf mixture into the pan. Smooth the top and brush with 1/3 of the prepared sauce.

5. Bake to Perfection

Preheat the oven to 375°F. Bake for about 40-50 minutes, or until the internal temperature reaches 160°F. A meat thermometer is the best way to ensure it’s fully cooked.

6. Add the Rest of the Sauce

Remove the liver loaf from the oven and add the rest of the sauce to the top. Bake for about 8-10 more minutes.

6. Let it Rest

Remove the liver loaf from the oven and let it sit for 5-10 minutes. This allows the juices to redistribute and results in a moist, good meatloaf.

7. Serve and Enjoy!
