Line your pan with parchment paper
Add 1 cup water and 1/2 cup beef gelatin to the bowl of a stand mixer and let bloom for 10 mins
Add 1 heaping tablespoon of masala chai powder
Heat up 1 and 1/2 cups of maple syrup to nearly boiling (235 degrees F)
Pour heated maple syrup to the gelatin chai mixture in your stand mixer bowl
Add 1 tsp of vanilla extract
Cover and mix on high for 10-12 minutes until you get marshmallow fluff, similar to stiff peaks
Pour the marshmallow mixture into your prepared pan and set in the refrigerator for 4 hours or overnight until firm
Cut and Enjoy!
