Homemade Chai Tea Marshmallows

Equipment

  • Stand Mixer
  • Baking Pan 9x9 or 9x13
  • Sauce Pan
  • Knife
  • Parchment Paper
  • Candy Thermometer optional

Ingredients

  • 1 cup water filtered
  • 1/2 cup beef gelatin
  • 1 1/2 cups maple syrup
  • 1 tbsp masala chai powder
  • 1 tsp vanilla extract

Instructions

  • Line your pan with parchment paper
  • Add 1 cup water and 1/2 cup beef gelatin to the bowl of a stand mixer and let bloom for 10 mins
  • Add 1 heaping tablespoon of masala chai powder
  • Heat up 1 and 1/2 cups of maple syrup to nearly boiling (235 degrees F)
  • Pour heated maple syrup to the gelatin chai mixture in your stand mixer bowl
  • Add 1 tsp of vanilla extract
  • Cover and mix on high for 10-12 minutes until you get marshmallow fluff, similar to stiff peaks
  • Pour the marshmallow mixture into your prepared pan and set in the refrigerator for 4 hours or overnight until firm
  • Cut and Enjoy!

Notes

You can use a 9x9 baking dish for thicker marshmallows or a 9x13 for less thick.
This recipe allows for a lot of creativity. If Chai isn't your thing, replace the tbsp of chai powder with cocoa or matcha. 
If you find that the marshmallows are too firm for your preference, you can reduce the gelatin to 1/3 cup to make them a little more fluffy.
