No-Bake Cookies

No-bake cookies are an easy go-to treat and you probably have all the ingredients in your kitchen already!

Equipment

Ingredients

  • 1/2 cup butter one stick
  • 2 cups coconut sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup whole milk
  • 3 cups oats
  • 1/2 cup peanut butter creamy or crunchy
  • 1 tsp vanilla extract
  • pinch salt

Instructions

  • Prepare your workspace & line your cookie sheet with parchment paper.
  • In a medium bowl, add oats, peanut butter and vanilla extract. Set aside.
  • Stir the butter, coconut sugar, cocoa, and milk together in a saucepan, and cook on medium heat until it boils. Turn the heat down to low and boil at a low rolling boil for 3 minutes.
  • Remove the saucepan from heat and swiftly stir in the oats, peanut butter, and vanilla extract from the bowl. Mix until all ingredients are well combined.
  • Using a medium cookie scoop, drop spoonfuls of the chocolate mixture onto prepared baking sheets lined with parchment paper.
  • Allow the cookies to cool at room temperature until they reach the perfect consistency. This usually takes about 20-30 minutes.
  • Once your no-bake cookies have set, transfer them to an airtight container or a Ziploc bag for longer storage.
