Prepare your workspace & line your cookie sheet with parchment paper.
In a medium bowl, add oats, peanut butter and vanilla extract. Set aside.
Stir the butter, coconut sugar, cocoa, and milk together in a saucepan, and cook on medium heat until it boils. Turn the heat down to low and boil at a low rolling boil for 3 minutes.
Remove the saucepan from heat and swiftly stir in the oats, peanut butter, and vanilla extract from the bowl. Mix until all ingredients are well combined.
Using a medium cookie scoop, drop spoonfuls of the chocolate mixture onto prepared baking sheets lined with parchment paper.
Allow the cookies to cool at room temperature until they reach the perfect consistency. This usually takes about 20-30 minutes.
Once your no-bake cookies have set, transfer them to an airtight container or a Ziploc bag for longer storage.
